Step-by-Step Instructions *
1. Preheat oven to 350F 2. Cream butter, sugars, baking powder/soda, and salt until light and fluffy, 1-2 mins 3. Add the eggs and vanilla. Mix until well combined 4. Add the flour and cocoa powder. Mix until evenly combined with no dry streaks 5. Scoop cookie dough into 2-tablespoon size balls and roll until smooth. Place on baking sheet a couple inches apart 6. Bake for 10-11 minutes. Cookies should be slightly set on edges and a little jiggly in the center 7. Remove from oven. Use a flat-bottomed glass to slightly flatten the tops of the cookies 8. Let cool for ~5 mins on baking pan, and then transfer to cooling rack to finish cooling 9. Make the ganache: add the chocolate chips to a bowl 10. Heat heavy cream until steaming and bubbles start to form around the edge. Add heavy cream to chocolate chips, pushing down chocolate chips to submerge 11. Let sit for 2-3 minutes, and then whisk until smooth and glossy 12. Let ganache cool for 5-10 minutes 13. Spread ganache topping on cookies and decorate with appropriate sprinkles
Additional Notes
I usually weigh my cookie dough balls. Using 60g balls I got about 20 cookies worth. The recipe says yield 36 so maybe 60g was a little too much. Otherwise made as written. Recipe notes that the cookies are even better after chilling in the fridge - and they indeed are!
