Devil's Food Cake
The BEST chocolate cake I have EVER made
Ingredients

unsalted butter

1/2 c
whole milk

1 c
water

3/4 c (75g)
Dutch-process cocoa powder

instant coffee/espresso

2 c (250g)
all-purpose flour

1 c (200g)
granulated sugar

1 c (200g)
light brown sugar, firmly packed

baking soda

1 t
baking powder

1 t
salt

3/4 c (190g)
sour cream

large eggs, room temp
-
2 t
vanilla extract
Instructions
Step 1
Preheat oven to 350F and grease or parchment paper line the bottom of 2 8" baking pans
Step 2
In a medium-sized saucepan, combine butter, milk, water, cocoa powder, and instant coffee
Step 3
Heat on medium-low and stir frequently until butter is melted. Increase heat to medium and bring to a boil, stirring constantly. Remove from heat and allow to cool for 15 minutes.
Step 4
In a separate bowl, whisk together flour, sugar, baking soda, baking powder, and salt.
Step 5
Whisk the chocolate mixture and then pour into dry ingredient mix. Stir until smooth.
Step 6
Add sour cream and stir until combined.
Step 7
Add eggs and vanilla and stir until batter is smooth.
Step 8
Evenly divide batter into prepared baking pans and bake for 30-35 minutes or until toothpick inserted in the center comes out with some fudge-y crumbs.
Step 9
Allow to cool for 15 minutes in the baking pan before removing from pan and letting finish cool on cooling rack.
Step 10
Cool cake completely before frosting.

Make this exactly as written. I really like the chocolate buttercream recipe I have added.
