Korean Beef Rice Bowls

Ingredients

  • 1 Tsp
    Sesame Oil
  • 1 to 2 lbs
    Lean Ground Beef
  • 3 cloves
    Garlic
  • 4 Tbsp
Soy Sauce (or Tamari if GF)
  • 1 Tbsp
    Minced Ginger
  • 3 Tbsp
    Brown Sugar
  • 1 Tbsp
Sriracha (more or less to taste)
  • 1 Cup
    Julienne Style Carrots
  • Optional Garnish
Chopped Green Onions, Sesame Seeds, Red Pepper Flakes
  • 4 Cups
    Cooked Rice

Instructions

Step 1
1. Prepare rice according to package or appliance directions
Step 2
2. Heat a large skillet over medium-high heat and add sesame oil
Step 3
3. Add ground beef to hot skillet and brown completely. Drain if necessary.
Step 4
4. While ground beef is cooking prepare sauce by adding garlic, soy/tamari, ginger, brown sugar and sriracha. Stir well to combine.
Step 5
5. Add sauce mix to cooked ground beef and stir to combine
Step 6
6. Add carrots (and red peppers if using), cook for about 2 minutes until slightly softened.
Step 7
7. Serve on rice with chopped green onions, sesame seeds, &/or red pepper flakes (or any desired combination)

Additional Notes

I usually double the sauce for us when using 1.5+ lbs ground beef (not going to be super saucy either way).

I add about 1 tsp of red pepper flakes to the sauce (vs garnish)

I only use 85% or higher ground beef, usually 90 or 93

I have made this with the addition of slivered red peppers which is also very good and bulks it up if using less beef

I have forgotten to use the sesame oil while browning the beef before and it DOES make a difference. It infuses flavor. If you use higher fat ground beef I would drain it a couple times then add the oil and brown it completely.
